Перспективы применения инулина в мясных продуктах спортивного питания

Введение. Разработка мясных продуктов для спортивного питания требует сочетания высокой пищевой ценности белкового компонента с функциональными ингредиентами, способными влиять на технологические и потребительские свойства продукта. Инулин представляет интерес для данной категории продуктов как пищевое волокно и функциональный ингредиент с пребиотическими свойствами. Благодаря своим технологическим характеристикам и возможности использования в качестве заменителя жира инулин может применяться при формировании структуры и свойств мясных продуктов. Вместе с тем целесообразность его применения должна оцениваться с учётом состава мясного сырья и совокупности сенсорных и экономических характеристик продукта. Комплексная оценка рецептур позволяет сопоставить их по качеству белка, сенсорным характеристикам, расчётному выходу и экономической эффективности, что способствует обоснованному выбору рецептуры для дальнейшего совершенствования разработанного продукта.
Цель. Оценить перспективность применения геля инулина и обосновать его дозировку при разработке рецептуры сосисок на основе куриного мяса и мяса ягнёнка, ориентированных на использование в питании спортивной направленности.
Материалы и методы. Проведено экспериментальное исследование четырёх рецептур сосисок: на основе куриного мяса; куриного мяса с гелем инулина в количестве 10% от общей массы; смеси куриного мяса и мяса ягнёнка; смеси куриного мяса и мяса ягнёнка с добавлением геля инулина в количестве 10% от общей массы. Биологическую ценность белковой части оценивали расчётным методом на основе аминокислотного скора с использованием стандартного аминокислотного состава белка ФАО/ВОЗ .Органолептические показатели разработанных образцов оценивали по пятибалльной шкале, выход готового продукта и себестоимость определяли расчётным методом.
Результаты. Расчётная биологическая ценность белковой части составила 85,611% для рецептур без мяса ягнёнка и 84,834–84,744% для рецептур с его включением. Наиболее высокие органолептические оценки получены для рецептуры, содержащей куриное мясо, мясо ягнёнка и гель инулина в количестве 10% от общей массы. Использование геля инулина сопровождалось повышением расчётного выхода готового продукта по сравнению с соответствующими рецептурами без инулина и снижением расчётной себестоимости.
Выводы. Полученные данные позволяют рассматривать гель инулина в количестве 10% от общей массы как перспективный функциональный компонент при разработке мясных продуктов спортивной направленности. Разработанный рецептурный подход сочетает приемлемые сенсорные характеристики с технологическими и экономическими преимуществами. Для дальнейшего практического внедрения целесообразно провести дополнительное экспериментальное исследование физико-химических, технологических и пищевых характеристик продукта.
Abstract
Introduction. The development of meat products for sports nutrition requires a combination of high nutritional value of the protein component with functional ingredients capable of influencing the technological and consumer properties of the product. Inulin is of interest for this category of products as a dietary fiber and functional ingredient with prebiotic properties. Due to its technological characteristics and its potential use as a fat replacer, inulin can be used in the formation of the structure and properties of meat products. At the same time, the feasibility of its use should be evaluated taking into account the composition of the meat raw materials and the overall sensory and economic characteristics of the product. A comprehensive evaluation of formulations makes it possible to compare them in terms of protein quality, sensory characteristics, calculated yield, and economic efficiency, thereby contributing to a well-founded selection of a formulation for further improvement of the developed product.
Purpose. To evaluate the prospects of using inulin gel and substantiate its dosage in the development of a sausage formulation based on chicken meat and lamb meat intended for use in sports-oriented nutrition.
Materials and Methods. An experimental study of four sausage formulations was conducted: a chicken meat-based formulation; chicken meat with inulin gel at 10% of the total mass; a mixture of chicken meat and lamb meat; and a mixture of chicken meat and lamb meat with the addition of inulin gel at 10% of the total mass. The biological value of the protein component was assessed using a calculation method based on the amino acid score and the standard amino acid composition of protein established by the FAO/WHO. The sensory characteristics of the developed samples were evaluated using a five-point scale, while the yield of the finished product and production cost were determined by calculation.
Results. The calculated biological value of the protein component was 85.611% for formulations without lamb meat and 84.834–84.744% for formulations containing lamb meat. The highest sensory scores were obtained for the formulation containing chicken meat, lamb meat, and inulin gel at 10% of the total mass. The use of inulin gel was accompanied by an increase in the calculated yield of the finished product compared with the corresponding formulations without inulin and a reduction in the calculated production cost.
Conclusions. The obtained data allow inulin gel at 10% of the total mass to be considered a promising functional ingredient in the development of meat products intended for sports-oriented nutrition. The developed formulation approach combines acceptable sensory characteristics with technological and economic advantages. For further practical implementation, additional experimental studies of the physicochemical, technological, and nutritional characteristics of the product are advisable.
