Этот ингредиент может позитивно влиять на показатели качества низкожирового йогурта, что положительно сказывается на длительности хранения продукта.</p></sec><sec><title>Цель</title><p>Цель: Изучить влияние резистентного крахмала, выделенного из красной чечевицы на изменение активной кислотности и органолептические показатели низкожирового йогурта в процессе хранения.</p></sec><sec><title>Материалы и методы</title><p>Материалы и методы: Образцы йогурта получали из коровьего молока с массовой долей жира 1,5%. Пастеризацию молока проводили при температуре +85,0±2,0°C в течение 30 мин, затем охлаждали до температуры +42,0±1,0°C с последующим внесением заквасочной культуры (2,5 мас.%) и резистентный крахмал, выделенный из красной чечевицы в концентрациях от 0,5 до 2,0 масс.%. Сквашивание проводили при температуре +42,0±1,0°C до образования сгустка, после чего образцы упаковывали и отправляли на хранение при температуре +4,0-5,0°C. Активную кислотность определяли на 1, 7, 14 и 21 сутки с использованием pH-метра; органолептическую оценку проводили по 20-балльной гедонической шкале на 1-е и 21-е сутки хранения.</p></sec><sec><title>Результаты</title><p>Результаты: Во всех образцах в процессе хранения наблюдалось снижение активной кислотности. Так, в 1-е сутки значения колебались в пределах 4,36–4,48. На 7-е сутки отмечалось резкое снижение (3,51–3,75), на 14-е сутки наблюдались незначительные колебания или относительная стабилизация, а минимальные значения рН были достигнуты на 21-е сутки хранения йогурта (2,86–3,05). Образцы с добавлением RS3 в концентрациях 1,0–2,0 масс.%, характеризовались замедлением постацидификации, по сравнению с контрольным образцом (без внесения RS3). По органолептическим показателям образцы, содержащие 1,0 и 1,5 масс.% RS3 получили наивысшие суммарные оценки (18,5–18,9 из 20) в конце хранения, в то время как контрольный образец и йогурт, содержащий 2,0 масс.% RS3, продемонстрировали незначительное ухудшение органолептических свойств к концу срока годности, что выразилось в появлении мучнистого привкуса и ухудшением однородности продукта.</p></sec><sec><title>Выводы</title><p>Выводы: Добавление резистентного крахмала красной чечевицы, способствует улучшению органолептических свойств низкожирового йогурта, а также снижает интенсивность постацидификации при хранении. Концентрации от 1,0 до 1,5 масс.% обеспечивают оптимальный баланс между органолептическими характеристиками и стабильностью водородного показателя, что подтверждает целесообразность использования RS3 в качестве натуральной добавки для повышения качества и функциональной ценности ферментированных молочных продуктов.</p></sec></abstract><kwd-group xml:lang="ru"><kwd>резистентный крахмал</kwd><kwd>красная чечевица</kwd><kwd>низкожировой йогурт</kwd><kwd>активная кислотность</kwd><kwd>органолептические свойства</kwd><kwd>хранение</kwd></kwd-group></article-meta></front><back><ref-list><title>References</title><ref id="cit1"><label>1</label><citation-alternatives><mixed-citation xml:lang="ru">Alkhatib, R., Barakova, N.
