Поиск штаммов молочнокислых бактерий, продуцирующих экзополисахариды, является перспективным направлением исследования за счет доказанного положительного влияния их на реологические свойства ферментированных пищевых продуктов, а также здоровье человека.</p></sec><sec><title>Цель</title><p>Цель: Провести исследование способности штаммов молочнокислых бактерий из коллекции Федерального государственного автономного научного учреждения «Научно-исследовательский институт хлебопекарной промышленности» (далее ФГАНУ НИИХП) продуцировать экзополисахариды, а также проведение сравнения различных методов их определения – гравиметрического, фенол-сернокислого по Дюбуа, метода с применением антронового реактива и титриметрического по Бертрану.</p></sec><sec><title>Материалы и методы</title><p>Материалы и методы: Для определения способности продуцировать экзополисахариды культуры молочнокислых бактерий культивировали на 12% солодовом сусле в течение 48 ч при оптимальной для каждого штамма температуре. После удаления белка и проведения диализа в культуральной жидкости определяли количество экзополисахаридов различными методами.</p></sec><sec><title>Результаты</title><p>Результаты: Установлено, что все коллекционные штаммы образовывали экзополисахариды в разном количестве. Определены штаммы, продуцирующие наибольшее количество экзополисахаридов – L. amilolyticus-2, L. plantarum А-63(d), L. amilolyticus -1, L. brevis-78(d), L. paracasei-6. Выход продукта, содержащего экзополисахариды, продуцентами которых являлись молочнокислые бактерии, находился в пределах от 7 до 14,4 мг в 1 мл культуральной жидкости. Результаты исследования позволили сделать вывод о корректности метода Дюбуа для оценки содержания применительно к экзополисахаридам, продуцируемым молочнокислыми бактериями.</p></sec><sec><title>Выводы</title><p>Выводы: Проведенные исследования подтверждают способность штаммов молочнокислых бактерий из коллекции ФГАНУ НИИХП продуцировать экзополисахариды. Установлена корректность метода по Дюбуа для определения экзополисахаридов, продуцируемых молочнокислыми бактериями.</p></sec><sec><title> </title><p> </p></sec><sec><title> </title><p> </p></sec></abstract><trans-abstract xml:lang="en"><sec><title>Introduction</title><p>Introduction: Exopolysaccharides are high molecular weight compounds consisting of monosaccharide residues and their derivatives, which have biological activity and play a protective role in physiological processes. The search for strains of lactic acid bacteria producing exopolysaccharides is a promising area of research due to their proven positive effect on the rheological properties of fermented food products, as well as human health.</p></sec><sec><title>Purpose</title><p>Purpose: To study the ability of lactic acid bacteria strains from the collection of FGANU NIIHP to produce exopolysaccharides, as well as to compare different methods of their determination - gravimetric, phenol-sulfuric acid Dubois method, anthrone reagent method and titrimetric Bertrand method.</p></sec><sec><title>Materials and Methods</title><p>Materials and Methods: To determine the ability to produce exopolysaccharides, cultures of lactic acid bacteria were cultured on 12% malt mash for 48 hours at the optimum temperature for each strain. After protein removal and dialysis, the amount of exopolysaccharides was determined in the culture fluid by different methods.</p></sec><sec><title>Results</title><p>Results: It was found that all the collection strains formed exopolysaccharides in different amounts. The strains producing the highest amount of exopolysaccharides were identified as L.amilolyticus-2, L. plantarumA-63(d), L.amilolyticus-1, L.brevis-78(d), L. paracasei-6. The yield of the product containing exopolysaccharides produced by lactic acid bacteria ranged from 7 to 14.4 mg in 1 ml of culture liquid. The results of the study allowed us to conclude the correctness of Dubois method for estimating the content with respect to exopolysaccharides produced by lactic acid bacteria.</p></sec><sec><title>Conclusion</title><p>Conclusion: The conducted studies confirm the ability of strains of lactic acid bacteria, from the collection of FGANU NIIHP, to produce exopolysaccharides.
